年关将近了,虽然家家户户都在忙着制作年饼,<br />
而我现在分享的却是之前的成品。<br />
<br />
如果是往年的这个时刻,我肯定是为忙着制作年饼而忙翻天了。<br />
不知道是否人在异乡少了那股动力,<br />
而且想到就算做了年饼也无法一一带回乡与家人分享的缘故。<br />
让我提不起动力。。。。<br />

年饼,或许还是会制作,<br />
只是分量肯定没有以往多,食谱有相中几道自家的年饼。<br />
至于什么时候动工,就要看那天有那个动力了。<br />

只是在切条的部分要切得齐整就比较考功夫些。

咸咸香香的饼干没有一般饼干的偏甜味道。

吃着吃着就越让人停不了嘴呢!

(食谱参考:君之,安妮)
<br />

<br />
<br />
材料:
<br />
低筋面粉 …… 150克
<br />
牛油 ………… 75克
<br />
鸡蛋 ………… 50克
<br />
细砂糖 ……… 10克
<br />
盐 …………… 3克
<br />
泡打粉 ……… 3克
<br />
肉松 ………… 30克
<br />
海苔 ………… 2克
<br />

做法:
<br />
1)将牛油切成小块,室温软化。
<br />
2)海苔预先剪碎,备用。
<br />
4)将海苔碎与肉松、泡打粉倒入过筛的低筋面粉里,混合均匀待用。
<br />
5)软化后的牛油加入糖和盐,用打蛋器打到体积稍膨大,颜色发白。
<br />
6)分三次加入鸡蛋液,搅拌均匀。每一次都要搅拌到鸡蛋和牛油完全混合均匀再加入下一次。
<br />
7)倒入第4步骤准备好的面粉混合物,揉成面团。
<br />
8)放在案板上,擀成长方形面片。
<br />
9)用锋利的刀切成条状。
<br />
10)把切好的小条排入烤盘,即可放入预热到170度的烤箱烤焙。中上层烤15分钟左右。烤至微金黄色即可。

<span style="color: magenta;"><b>***温馨提醒:</b></span><br />
a) 加入鸡蛋液的时候,一定要分次加入,每一次都要充分混合再加下一次,避免造成油水分离。
<br />
b) 揉成面团的时候,只要揉成团就可以,不要过分揉搓,以免影响饼干的松脆口感。
<br />
c) 切条的时候,尽量用锋利一些的刀,避免海苔切不断导致切口不整齐。
<br />
d) 海苔与肉松的用量可以根据口味酌情增减。
<br />
e) 不同品牌,体积的烤箱,其温度及烘烤时间都有差别。所以食谱上的温度和时间仅可作为参考。

材料:<br />
牛油 ………… 100g<br />
糖粉 ………… 50g<br />
香草精 ……… 1/4小匙 (不喜欢它的味道,没放)<br />
全蛋 ………… 30g<br />
低筋面粉 …… 150g<br />
奶粉 ………… 25g<br />
泡打粉 ……… 1/4小匙<br />

装饰:<br />
蛋白 ………… 适量<br />
杏仁豆 ……… 适量<br />
<br />
<br />
做法:<br />
1)牛油在室温下软化,加入糖粉用搅拌机搅打均匀。<br />
2)加入香草精并分次加入全蛋,继续用搅拌机快速打发呈均匀的奶油湖。<br />
3)筛入低筋面粉,奶粉及泡大粉,改用橡皮刮刀以不规则的方向拌成均匀面团。<br />
4)将面团包入保鲜膜内,放入冰箱冷藏松弛约30分钟左右。<br />
5)取出面团分成8g左右,用手揉成圆球状后,排放在铺了不沾烘培纸的烤盘上。<br />
6)刷上蛋白,再放上一粒杏仁豆。<br />
7)送入预热烤箱,以140度烘烤20-25分钟左右。<br />

c)不同品牌,体积的烤箱,其温度及烘烤时间都有差别。所以食谱上的温度和时间仅可作为参考。<br />

可出乎意料蛋糕却很美味!<br />

** 苹果块抹上细糖, 煮到软, 待凉。<br />

奶油 ……… 50g <br />
细糖 ……… 30g <br />
鸡蛋 ……… 1个 <br />
牛奶 ……… 50ml <br />
低筋面粉 … 80g <br />
发粉 ……… 1/2小匙 <br />
杏仁碎 …… 随意<br />

装饰:<br />
苹果 ……… 1/2 粒 (切片 )<br />
细糖/糖粉 …1/2 大匙<br />
肉桂粉 …… 2-3撮<br />
** 把全部混合一起备用。<br />

做法:<br />
1) 用电动搅拌器, 把奶油和细糖打发。 <br />
2) 徐徐加入蛋液, 搅拌均匀。 <br />
3) 最后筛入粉类和牛奶, 拌匀。 <br />
4) 加入苹果块, 拌匀。 <br />
5) 把面糊放入烤杯, 蛋糕上层铺上苹果片。 <br />
6) 放入预热170‘C的烤箱, 烤20-25分钟。 <br />

自发面粉 …… 85g<br />

1)奶油和细砂糖打发颜色变浅。<br />
2)鸡蛋一粒一粒分次加入,每加入一粒蛋须将充分拌匀。<br />
3)筛入自发面粉和可可粉,以橡皮刮刀轻轻拌匀即可。<br />
4)将面糊倒入小纸杯里约8分满。<br />
5)预热烤箱,以160度烤约20分钟即可。<br />

这平台让我认识了很多很多来各地的知心博友,<br />
也因为大家的无私分享我才能够做出格式的美味烘培与料理。<br />

只是要兼顾家庭与工作的我如果继续分享,将无法时常更新,<br />

不知道是否在烘培纸上涂抹的油不够多。<br />
烘好的蛋糕体卷起来时,花纹部分全都粘在烘培纸上无法附在蛋糕体上。<br />
后来我是用手一个一个慢慢的将花纹由烘培纸撕下后再贴上蛋糕体。<br />
幸好部分勉强还可以帖服住。<br />
第一次挑战蛋糕卷彩绘就失败了。<br />
有点挫败感。<br />

做法: <br />
1)材料A放入大碗中搅匀,加入材料B拌匀成面团。 <br />
2)将做法(1)放在两张塑胶纸中间,以擀面棍擀成毫米厚,以喜爱的模型按出形状,排放在铺了不沾烘培纸的烤盘上,扫上蛋液及撒上一些干椰丝装饰。 <br />
3)放入预热烤箱,以140度烘烤15分钟或金黄色,取出待冷后收入不透风罐子。 <br />

高筋面粉 ……… 250g<br />
白糖 …………… 2汤匙<br />
奶粉 …………… 3汤匙<br />
牛油 …………… 1汤匙<br />
面包改良剂 …… 1茶匙<br />
蛋黄 …………… 1粒<br />
盐 ……………… 半茶匙<br />

材料B:<br />
温水 …………… 150ml<br />
酵母 …………… 10g<br />

材料C:<br />
绿豆沙/红豆沙 … 250g<br />
芝麻 …………… 适量<br />
牛油 …………… 适量<br />

做法:<br />
1)将材料B混合均匀。<br />
2)将材料A倒入一个大盘中混合均匀。<br />
3)慢慢的倒入材料B,将面团揉至光滑。<br />
4)将面团分成50g小团搓圆,以保鲜纸盖着,修面5分钟。<br />
5)将面团擀平,包入20g的绿豆沙,休面5分钟。 <br />
6)将面团擀平,以刮片如下图切线条。在表面涂上一层牛油。<br />
7)转紧两端往相反方向转。<br />
8)卷成一团成花卷,将两端收入中间。<br />
9)表面沾上芝麻。(如果不黏可以搽些牛油好让芝麻可以黏着面团)<br />
10) 让面团放在涂上牛油的烤盘上待发约40分钟。<br />
11) 放入预热烤箱,以150度烘10分钟即可。(视个人烤箱)<br />

牛油 ………… 150g<br />
菜油 ………… 50g<br />
幼糖 ………… 120<br />
鸡蛋 ………… 3粒<br />
普通面粉 …… 130g<br />
牛奶粉 ……… 20g<br />
发粉 ………… 1/2小匙 <br />
腰豆 ………… 100g (烘香,切碎)<br />

做法:<br />
1)将牛油,菜油和幼糖打至松发 变白。<br />
2)加入一粒鸡蛋,搅拌至蛋与牛油完全吸收后,才加入第二粒鸡蛋;继续搅拌均匀,直到把鸡蛋加完为止。<br />
3)拌入过筛的面粉,牛奶粉,发粉和腰果碎,改用刮刀搅拌均匀。<br />
4)把面糊舀入模型里,以腰果装饰表面。<br />
5)放入预热烤箱160度,烘烤约30分钟左右或致熟。<br />

牛奶 ………… 35g<br />
沙拉油 ……… 25g<br />
低筋面粉 …… 100g<br />
泡打粉 ……… 1/4小匙<br />
全蛋 ………… 200g<br />
细砂糖 ……… 100g (原食谱120g) <br />
盐 …………… 1/4<br />
蛋糕乳化剂 … 1小匙<br />
肉松 ………… 随意<br />

做法:<br />
1)牛奶与沙拉油放在同一个容器内,低筋面粉和泡打粉一起过筛,备用。<br />
2)全蛋加入细砂糖及盐用就搅拌机搅匀。<br />
3)分别加入蛋糕乳化剂及过筛的粉类,用搅拌机慢速至快速的方式搅拌至呈乳白色的糊状。<br />
4)快速搅拌的同时,将做法(1)的所有液体材料慢慢加入做法(3)中,继续搅约2-3分钟呈均匀的面糊状。<br />
5)用橡皮刮刀将做法(4)的1/2面糊刮入烤模内,并将表面抹平。<br />
6)预热烤箱150度,把面糊放入烘烤约10-15分钟左右,待面糊定型。<br />
7)将烤箱内的烤模取出,铺上均匀的肉松,再刮入剩余面糊,用橡皮刮刀将表面抹平。<br />
8)继续烘烤15分钟左右。<br />

好快~就这样我们结婚一周年了。<br />

毕竟一开始谈着远距离恋爱的来个人突然处在一起多少都会有各自的生活想法吧!<br />

2)将牛油和幼糖一起搅拌至松发。<br />
3)加入番薯泥,再搅拌2~3分钟。<br />
4)鸡蛋分次加入,慢慢拌均匀。<br />
5)加入已过筛的低筋面粉和发粉,改用刮刀拌匀。<br />
6)加入葡萄干拌均匀。<br />
7)倒入纸杯约8分满。<br />
8)预热烤箱,以180度烘烤20-25分钟或至熟即可。<br />

祥先生很喜欢九层糕。<br />
无奈新国的糕点都是注重“色相”,<br />
每次想买,可看到那鲜艳的颜色就作罢了。<br />

自家的九层糕我只弄了白色,青色和红色3个颜色。<br />
青色部分我放了一些班兰香精,颜色好看之余也有淡淡的班兰香;<br />
红色部分我就放了一点点的色素。<br />
糖量部分也调整到自家可接受的甜度。<br />
所以怎么说还是自家做的比较健康。<br />

溶化牛油 …… 200g (要注意不要加热过度,以免油脂分离,整个muffin cup会很油<br />
鸡蛋 ………… 150g (3粒)<br />
牛奶 ………… 100g<br />

材料B:<br />
香蕉 ………… 300g (约5条,最好是熟透的那种,比较香)<br />
幼糖 ………… 170g (如果香蕉很甜,可以考虑减少一些糖的分量)<br />
盐 …………… 1g<br />

材料C:<br />
面粉 ………… 210g<br />
巧克力粉 …… 15g <br />
发粉 ………… 5g (1小匙)<br />
苏打粉 ……… 5g (1小匙)<br />

做法:<br />
1)材料A的牛油溶化后放凉,加入打散的鸡蛋和牛奶用手动大蛋器搅拌均匀。<br />
2)材料B的香蕉压烂成泥,加入幼糖和盐搅拌至溶解。<br />
3)将上述两者混合,加入过筛的材料C拌成面糊。<br />
4)将面糊装入muffin cup内八分满,移入预热的烤箱以180度烘烤30分钟或至熟。<br />

二来朋友有兴趣学习做芝士蛋糕。<br />
而他家里又没烤箱,<br />
所以就再次挑战冷冻芝士蛋糕。<br />

食谱还是依据之前的<a href="http://chingkitchen.blogspot.com/2010/03/blog-post_29.html">冷冻卡式特芝士蛋糕</a>食谱,<br />
只是这一次省略了香蕉部分,改做了草莓口味的冷冻芝士蛋糕。<br />
简单的在麦记买了一杯草莓雪糕。<br />
取出雪糕内的草莓加入芝士内搅煮行了。<br />
是不是很简单呢?(其实还不是懒惰。^^)<br />

这一次拉长了搅煮时间。<br />
说真的蛋糕冷藏后要脱摸时还真的有点战战克克。<br />
还好这一次终于成功了,蛋糕顺利切片美美的。<br />

材料:<br />
高筋面粉 … 250g<br />
低筋面粉 … 50g<br />
幼糖 ……… 30g<br />
盐 ………… 1/4小匙<br />
奶粉 ……… 15g<br />
即溶酵母 … 3g<br />
全蛋 ……… 30g<br />
水 ………… 150g<br />
奶油 ……… 20g<br />

做法:<br />
1)将所有材料(除了奶油)用慢速搅拌成团,再用中速搅拌至光滑。<br />
2)加入奶油用慢速搅拌,再用中速搅至可拉出薄膜,盖上保险纸,发酵80分钟 。<br />
3)将面团按压出空气,分成两份,整形成圆形,最后发酵大约45分钟,。<br />
4)送入预热烤箱,160度烘烤大约25分钟或至熟。(由于面包表面要涂抹美奶滋和肉松,涂蛋液这一环可省略。)<br />

材料:<br />
白面包 …… 6片<br />
鸡蛋 ……… 2粒<br />
牛奶 ……… 40克<br />
糖 ………… 20克<br />
<br />
奶油 ……… 少许(我用 planta)<br />
食用油 …… 少许<br />
<br />
<br />
做法:<br />
1) 鸡蛋,牛奶,砂糖 搅拌均匀,待用。<br />
2) 平底锅内放入少许油和 planta (看美食频道说这样是防止牛油焦) <br />
3) 面包沾蛋液,放入平底锅内煎到两面金黄色就可以了<br />
4) 撒上适量糖粉就可以食用了。(我不嗜甜,这部分我省略)<br />
